- Carrots: 1, julienned
- Red Onion: 1 small, thinly sliced
- Thai Bird's Eye Chilies: 2-3, finely chopped
- Garlic: 2 cloves, minced
- Fresh Cilantro: 1/4 cup, chopped(optional)
- Fresh Mint: 1/4 cup, chopped(optional)
- Crushed Peanuts: 1/4 cup
- Lime Juice: 3 tablespoons
- Fish Sauce: 2 tablespoons
- Palm Sugar: 1 tablespoon, grated
- Rice Vinegar: 1 tablespoon
Instructions
Prepare the Vegetables
Wash the cucumbers, cherry tomatoes, carrots, and red onion under cool running water and pat dry. Thinly slice the cucumbers into even rounds using a knife or mandoline. Halve the cherry tomatoes, and julienne the peeled carrot into matchstick-sized pieces. Thinly slice the red onion into half-moon shapes.
